This is why I always recommend buying another hood thermometer and sticking this on here. Move the meat away and place on a cutting board. Reduce heat to 325F. Smoke until cooked to your desired temperature. Preheat your Traeger to 500 degrees Fahrenheit and leave it closed for 15 minutes to get the temperature up to 500 degrees. This will leave your prime rib overcooked and dry. I prepare Prime Rib so many different ways; smoked reverse seared or even sous vide. Worcestershire sauce, beef stock, or water, for basting (optional). Going up to 250 degrees F shouldn't make too much of a difference here but I would advise yo to keep a close watch on the internal temperature nonetheless. No Worries! I remember going to Las Vegas for the first time back in college and having a $5.99 Prime Rib buffet. Add the olive oil and pulse to form a paste. I do have to warn you that these thermometers aren't the most accurate and can sometimes be off by as much as 10 degrees.
